Smoked Deviled Eggs

Ingredients:

  • 12 Large eggs

  • 2 Slices bacon

  • 1/2 Cup Sriracha mayo

  • 2 Teaspoon white vinegar

  • 2 Teaspoon sweet n’ hot mustard
    2 Teaspoon spicy brown mustard

  • 1/2 Teaspoon chili powder

  • 1/2 Teaspoon smoked paprika

  • 1/4 Teaspoon salt

  • Paprika and chopped chives for topping

Directions:

  1. Boil eggs, I used the instant pot and the eggs peeled very easily.

  2. Set Traeger grill temperature to 180℉ and preheat, lid closed for 15 minutes.

  3. Place the eggs (yolk side up) on the grill. Close the grill and allow to smoke for 45 minutes.

  4. Cook the bacon until crispy. Allow to cool and chop into pieces.

  5. Remove eggs from grill. In a medium bowl scoop the yolks out of the eggs. 2 tbsp bacon, mayo, vinegar, mustards, chili powder, paprika, and salt. Using a fork, mash the mixture together and taste for seasoning.

  6. Add yolk mixture to egg white halves. Top with a dash of paprika, chopped bacon and chives.

  7. Enjoy!
